KodiReganBioPicOne of the newest stars to the valley is Regan Briggs, a culinary de-LIGHTRESS. Regan grew up in the town of Fenton, Michigan. From her earliest enLIGHTenment, Regan knew she had a knack for cooking, loving to simply bake cakes after school at a local bakery. She decided to pursue her love for food and graduated with honors from Pennsylvania Culinary Institute, majoring in pastry arts. Regan simply sparkled as she fulfilled her externship at The Broadmoor in Colorado Springs. Moving to Southern California, Regan has worked in some of the top kitchens in Los Angeles over a seven year period. These included The Four Seasons Los Angeles in pastry, to a rapid ascension into the position of Executive Pastry Chef of Crescent Heights Kitchen and Lounge in San Diego. Moving back to LA, Regan aspired to the culinary side of the kitchen. She became Executive Sous Chef of Vu restaurant in Marina Del Rey and helped open Wolfgang Puck at the famous Belair Hotel.

None other than Del Norte’s own, Kodi Whitehead, introduced Regan to this Valley! Kodi and Regan are a dynamic team, meeting each other while both working at The Broadmoor. Kodi, while completing his degree in Theatrical Arts from Colorado College, worked full time at The Broadmoor. This is where his passion and talent for food, beverage, wine and hospitality began.  Initially, Kodi and Regan decided to move to Los Angeles in pursuit of an acting career for Kodi. Both, instead, received an education of a lifetime working around the Los Angeles food scene. Kodi helped open Cut Beverly Hills, Wolfgang Puck’s first steakhouse. Kodi’s passion for food and beverage rocketed while working at Cut over seven years. He became a Certified Sommelier from the Court of Master Sommeliers. Throughout their time in Los Angeles, Kodi and Regan developed a mutual dream of owning and operating their own establishment someday.

Funny how the universe can bring it all together…

Steve Whitehead, resident of Del Norte for 27 years and father of Kodi, was the original Vice President of the Windsor Restoration and Historical Association, Inc, a community non-profit organization who saved The Windsor Hotel (1993) from demolition. Actively part of the Windsor’s revival and frequent patron during the first year of operation after the restoration, Steve decided to take over the operation with the help of Kodi and Regan. It seems fitting that Steve, Kodi, and Regan are now part of keeping The Windsor flourishing for years to come.
